SAUVY™ has been selected through an innovative microbiological approach due to its unique metabolism and enzymatic activities resulting in the exceptional potential to uptake and release volatile thiols, especially 4MMP (also known as 4MSP). Combining those distinctive properties and abilities to express other aromas, SAUVY™ is well suited for the production of intense and fresh aromatic whitewines. Wines fermented with SAUVY™ show typical flavor profiles described as boxwood, gooseberry, tomato leaf, passion fruit, citrus and black currant. SAUVY™ also favors refreshing and crisp mouthfeel sensation.

SAUVY™ kann mit jeder Rebsorte verwendet werden, die ein Thiolbildungspotenzial besitzt, um den sortentypischen Ausdruck zu maximieren.
Es kann auch auf neutralere Sorten oder Most aus warmen Klimazonen angewendet werden, um ein frischeres und lebendigeres Aromaprofil zu unterstützen.
SAUVY™ wurde durch einen innovativen Selektionsansatz ausgewählt, der die vollständige Expression des IRC7-Gens ermöglicht. IRC7 kodiert die β-Lyase-Aktivität, das Schlüsselenzym, das für die Freisetzung sortentypischer Thiole während der alkoholischen Gärung verantwortlich ist.
Die Wahl von SAUVY™ maximiert die Thiolfreisetzung und verbessert die sortentypische Typizität.
• Impftemperatur der Hefe: >16 °C (18 °C empfohlen während des ersten Drittels der alkoholischen Gärung)
• Anfängliche SO₂-Zugabe: ≤ 5 g/hL (auf molekulares SO₂ bei niedrigem pH-Wert achten)
