  • On July 9th, Florian Bahut will explore the high antioxidant potential of inactivated non-Saccharomyces yeasts, presenting their various metabolites and their impact on winemaking, under the theme of non-targeted analysis and chemometrics.
  • Julie Mekoue will look at the protective role of yeast protein extracts in mitigating white wine cloudiness, offering new insights into wine protein stability under the theme of biotechnology and microbiology, on July 10th.
