(Saccharomyces cerevisiae cerevisiae)
Respectful to varietal characters, an all rounder for red and white table wines.
Isolated in Stellenbosch, South Africa, ENOFERM M2 ™ is used as a general purpose wine yeast for a wide range of red, white and rosé styles. Noted to impart esters. Has potential to accumulate higher than normal concentrations of succinic acid and is sensitive to sulphur dioxide at pH 3.2 or lower.
