LEVEL2 SALVA™ is a non-fermentative wine yeast selected from nature with the South African Grape and Wine Research Institute (Stellenbosch University) for its specific bioprotection properties against Brettanomyces spp. This original strain of Suhomyces pyralidae produces the “Brettanomyces Inhibition Factor” (Spkt1), which creates disruptions in Brettanomyces spp. cell walls.

No. Once Brettanomyces cell walls are disrupted by the BIF, the cells cannot regrow. However, as the inhibition factor is sensitive to ethanol, there is no remanent effect. If there is a contamination in Brettanomyces after the end of alcoholic fermentation, the wines are no longer protected. This is why complementary tools are recommended post-AF/post-MLF.
Up to 40 mg/L total SO₂ or <20 ppm free SO₂ (pay attention in low pH conditions). Timing between SO₂ addition and LEVEL² SALVA™ inoculation is key.
The minimum recommended dosage is 5 g / 100 L of must or 100 kg of grapes.

Yes. A minimum 12-hour contact time is recommended between LEVEL² SALVA™ inoculation and Saccharomyces cerevisiae inoculation. Some winemakers reported a good efficiency of LEVEL² SALVA™ even when inoculated at the same time as the selected Saccharomyces cerevisiae.
