CAUDALYS™ is a natural specific inactivated Torulaspora delbrueckii produced with the dedicated Lallemand SDC PROCESS™. The combination of the original wine yeast strain from our collection and the optimised SDC PROCESS™ leads to the unicity of this product. With its specific composition, added in must or in wines, CAUDALYS™ has a unique sensory contribution. It enhances crisp, saline and mineral notes, with a better aromatic length in white and rosé wines.

CAUDALYS™ is the first wine yeast fraction from non-Saccharomyces ever released on the market. It is produced from Torulaspora delbrueckii wine yeast using Lallemand’s exclusive SDC production process, resulting in a highly specific yeast derivative designed for sensory enhancement in wines.
CAUDALYS™ enhances crispness, saline and mineral notes, while improving aromatic length and freshness. These sensory contributions are particularly valued in white and rosé wines, where precision, vibrancy and persistence are key drivers of wine style and consumer preference.
Depending on your winemaking objectives, CAUDALYS™ can be added both in musts (at the beginning of alcoholic fermentation) and wines.
• In musts: 10 to 30 g/hL
• In wines: 5 to 15 g/hL
Yes. CAUDALYS™ can also be used in sparkling wines to enhance aromatic length as well as crisp, saline and mineral notes.
It can be added:
– In musts or sparkling base wines (5 to 15 g/hL)
– Or in the liqueur de tirage (5 to 10 g/hL), where it can help reduce bubble harshness and improve mouthfeel.
A minimum contact time of 7 days is recommended to allow CAUDALYS™ to fully express its sensory contribution.
Yes. CAUDALYS™ can be applied to wines that have already been stored, helping to restore freshness, aromatic precision and overall vibrancy without altering the wine’s identity.
