HEDONYS™ is a specific wine yeast fraction from non-Saccharomyces (Torulaspora delbrueckii) produced with Lallemand’s exclusive MEX production process. This unique combination results in a product with a very high content of bioavailable mannoproteins with distinctive sensory properties.
HEDONYS™ enhances sweetness perception and balance to improve drinkability, a key sensory attribute highly valued by wine consumers. It is an ideal solution for early-release wines.

HEDONYS™ can be applied both in musts (at the beginning of alcoholic fermentation) and in finished wines. Dosage depends on the timing of application:
• In musts: 10 to 30 g/hL
• In wines: 5 to 15 g/hL

Yes, it is perfectly suited for this type of application. It can be applied to wines before or after the dealcoholisation process.

A minimum contact time of 7 days is recommended.

Yes. In red wines, HEDONYS™ helps polish tannins and reduce astringency. In acidic white and rosé wines, it enhances sweetness perception and balance.
