High performance pectolytic enzyme for thermo-treatments
LALLZYME THERMO™ is a liquid enzyme preparation, obtained from Aspergillus niger, designed for thermo-treated grapes. It contains special pectinases activities able to act at higher temperatures - up to 68°C (154°F) - compared to standard pectinases; it also contains specific macerating activities for more color and polyphenols extraction and complexity.
