The new Sauvy™ wine yeast for aromatic, high thiol potential white wines

Sauvy™ is a new selected wine yeast with an exceptional capacity for the uptake and release of volatile thiols (especially 4MMP). It enables the production of intense aromatic white wines with very crispy mouthfeel and flavour descriptors like gooseberry, boxwood, passion fruit, or blackcurrant. Ideally used in varietals that benefit from the full expression of thiolic compounds such as Sauvignon Blanc, Verdejo, Vermentino, Gros Manseng, Colombard. Sauvy™ is produced under the patented YSEO™ process to maximize performance during wine fermentation.
