Institute of Masters of Wine and Lallemand award Diego Bonnel the 2016 Bursary

The management and control of the balance of the wines, their levels of alcohol and acidity, is an issue for the wine industry, both in terms of public health and balanced taste. Winemaking professionals will face the challenges posed by the increasing levels of alcohol means and risks posed lower levels of acidity in wines in coming years. This is the essay produced by Diego Bonnel, winner of the Lallemand 2016 the Institute of Masters of Wine Bursary   For twenty years, the average levels of alcohol in wines are rising and would be accompanied by a drop in a little acidity levels worldwide. Changing this balance poses new challenges to the profession, in terms of both longevity wine, but mostly typicity, according Diego Bonnel, student of the prestigious Institute of Masters of Wine.

In a short essay (1000 words), the French candidate Diego Bonnel documented this crucial issue at the heart of the wine world’s concerns. According to the winner, ensure balanced wines without uniformity and changing their typicity will be at the heart of the profession’s challenges in the coming years. He was awarded the Lallemand Bursary in 2016 in recognition of his work which will allow him to attend the XVIth Entretiens Scientifiques Lallemand (ESL), to be held this year in Osoyoos, British Columbia (Canada). This will be an opportunity for him to discuss the theme of the relationship between terroir and biodiversity with experts and scientists from around the world.
