Lalvin Sauvy™ is a new selected wine yeast with an exceptional capacity to uptake and release volatile thiols (especially 4MMP). It enables the production of intense aromatic white wines with a very crispy mouthfeel and flavor descriptors like gooseberry, boxwood, passion fruit, or blackcurrant. Ideally used in varietals that benefit from the full expression of thiolic compounds such as Sauvignon Blanc, Verdejo, Vermentino, Gros Manseng, Colombard.
