A Côtes du Rhône isolate, Rhône 2056 was selected by the IFV - Institut Français de la Vigne et du Vin and CICDRVT from over 1400 yeasts for its ability to maintain and enhance varietal fruit aromas and flavours of Côtes du Rhône varieties. Contributes to complexity of red fruits, spiciness, and maintains red wine colour. glucosidase activity allows release of norisoprenoids (violet and peach aromas) in some varieties. Excellent for forward fruit style reds, and also provides aromatic expression in Sauvignon Blanc, Chardonnay and Semillon.Fermentation Speed
