UVAFERM CGC62™ yeast has been selected from the indigenous yeasts that have traditionally fermented the wines of Cognac, from which distillate is prepared to provide the Cognac’s of France. The yeast was studied in the laboratory and in winery trials for several years and found to give fermentation character required to produce premium Cognac and Brandy
