A new scientific approach has enabled the development of an innovative selection technique for this specific yeast which produces low levels of SO2, H2S and acetaldehyde. This strain is a good selection for Sauvignon Blanc, Chenin Blanc, Colombar and Chardonnay – also if very low SO2 levels are required.
