A French isolate, Simi White is used for fruity white wine, particularly Chenin Blanc, Riesling, and rosé style wine. Also known for its aroma and flavour contribution to Chardonnay and has been described as contributing creamy fruit characters. Simi White has a fermentation temperature range 15°-30°C, but will ferment slowly at 10°-13°C once active fermentation is established.
