Over the last 10 years, considerable effort has been put into understanding the role of non-Saccharomyces yeasts in wines aromatic expression. Level² Td is the first expression of the work undertaken by the lallemand’s r&d group which results in a yeast couple (a nonconventional yeast and a Saccharomyces cerevisiae yeast) in sequential inoculation, in order to promote aromatic complexity in white wines with low aromatic potential.
