Familiarise Yourself With Malolactic fermentation

Malolactic fermentation is generally considered to be a simple breakdown of malic acid in red wines, and in some white wines, with the accompanying release of CO2, the formation of lactic acid and a reduction in the total acid content of the wine in question. This is in fact exactly what happens, although the above could be an oversimplification of the process on the whole if it is deemed to be all that occurs.
