Hefetagung at agroscope Wädenswil / Schweiz
The Swiss Federal Research Institute in Wädenswil operates highly reputated oenological Departments. Wine microbilogy and vinification management teams cooperate with viticultural and plant protection experts.
Lallemand proudly continues the longterm cooperation for fermentation science and yeast selection with Wädenswil.
April 4th, 2008 at 9.30 hrs will start the annual Hefetag, a wholesome exchange of experience with engaged oenologists from Swiss wine growing areas.
Optimised applications for excellent results with malo-lactic fermentations will be presented by Lallemand´s Dr. Krieger/Germany. Right timing of inoculation with specific starter cultures are key to success.
Fermentation metabolism and innovative alcoholic fermentation will be key subjects for the exchange of new research knowledge and oenological experience. Agroscope´s experts have studied in detail the dynamics of H2S-formations by various yeast strains. New concepts to avoid sulphur related off-flavours in wine will be presented by K. Burger from Lallemand Wien.
